Whatever you use to wrap food, one thing remains crucial: hygiene and timing. Freezing stops bacteria multiplying, but it doesn’t eliminate them entirely. If you freeze food that’s already on the turn, you don’t “save” it - you preserve the problem.

A common scenario: after Sunday lunch, there’s a large piece of roast left. Once the meal is finished, it cools to room temperature, then it’s wrapped in thick aluminium foil as airtight as possible. In the freezer, that’s perfectly fine for one to two months - provided the meat isn’t heavily marinated or aggressively seasoned. Later, it’s thawed in the fridge and reheated in a pan or pot - and crucially, not put in the microwave while still in the foil.

Another situation: a big pot of tomato sauce is still half full. Here, aluminium foil in direct contact with the sauce is the wrong choice. Better: portion the sauce into several small containers, let it cool, put the lids on, then freeze. If you’re worried about smells spreading in the freezer, you can slip the containers into a freezer bag or wrap a strip of foil around them as a final step - without the aluminium touching the sauce.

Once you adjust your habits, you quickly notice that aluminium foil remains handy in certain cases, such as bread and dry baked goods. But for anything spicy, acidic or extremely salty, other options are far better. That not only reduces the chance of higher aluminium intake, but also cuts down on freezer chaos - and ultimately means fewer mysterious blocks of ice ending up in the bin.
